    i just had a great thai green curry with 4 springrolls from a new thai restuarant that just opened up the other day.i love thai food!!!!

    We have our annual cocktail party at the Dorchester tonight, which we are working at (Door Bitches )

    So whatever food they are serving there we will get i imagine it will be pretty good!

    Turkish bread drizzled with chilli and garlic dipping oil (norty norty) inside stuffed with finely chopped capsicum, red onion, sun dried tomato cheese, fresh basil and field mushrooms, cracked pepper and salt.. wrapped in foil and lobbed on the webber.. the last 5 minutes I take the foil off and let the bread crust up.... absolutely divine and really worth arking the coals up.. and a glass of chenin blanc..

    kind of unsatisfying, when i just watched the king of iron chefs semifinal with the theme ingredient of tokyo x pork
    its a superpig that is bred from a couple of different species to give the best qualities of each

    i made chicken tikka masala and i varied it by adding a bit of madras and coconut milk. served with rice and naan bread.

    and then i had some lindt

    dear Moe / cooking pro's (/ not inclusive of trolls like crave )

    i made my first pie just then and the pastry turned out way tooo soggy... i put 3 sheets of puff pastry at the base, then put the chicken+bacon filling in and placed 2 sheets on top... as the pic shows the pastry was nice and cripsy on the top but subsequent layers were soggarama...

    the question i have is should i be putting less layers of puff pastry or is it a case of leaving it in the oven for longer? had it at 190deg for 40mins

    here is a pic to illustrate what i'm tryign to say:



    also does anyone have any other fillings they liek to use for pies? I did bacon + chicken + peas & mushroom, but it was way too salty due to the bacon and the reduced broth was also very salty, which formed the gravy

    up nedt i'm trying prawn+peas, but then i'm, all out of ideas

    I wouldn;t use puff pasty on the bottom, you can buy shortcrust pastry, I think it might be meant for sweet pies, but its always worked for me. You need to bake it for about 15 mins or something, before you put the filling and the puff pastry on the top.

    As for fillings, I dont get too crazy, I usually just cook anything I'd put in a stew/cassorole;
    lamb, mushroom, onion, tomato, romsemary is probably my fav.

    is that north daemos ? which one is it ?

    i had a huge kebab in the afternoon with the chefs own aeoli dressing and fried red onions, was delicious. then 2 pieces of pizza and a bottle of wine for dinner

    jules made me dinner! im so fucking slack lately.

    we had two steaks each, with boiled potatos and steamed broccoli and beans.

    nothing quite as satisfying as two chunky slabs of dead cow and a six pack of cold beer. mm mmmmmmmmm fuck yeah!

    something tells me its bedtime for this little duck

    i had to buy my own food as my mum always assembles something i hate and something vastly over-processed

    so i bought honey-soy chicken on the kebab stick and i made potato gratin dauphinois (sp??) mmmm

    i dunno but last nite the husband and i had:

    roast pork
    w/ roasted cayenne potato wedges, carrot and pumpkin
    served with steamed broc and corn cobs...
    drowned in sauce from the roast pork dripping...

    payback for the killer training session i got given earlier in the evening...

    tonight i am curling up on the couch and having thai food and red wine with one, if not TWO of my favourite ladies.

    tonights feast, grilled atlantic salmon on a bed of sweet potato mash and wilted spinach, steamed asparagus all topped with a drizzle of white sauce.
